Gelana Abaya comes to Novo from small family farms located in the Gelana and Abaya districts of the Boreda Zone of Ethiopia. At these farms, ripe cherries are carefully sorted and then washed. After the washing process, the coffee is dried in its parchment on raised beds, where it is turned every 2 to 3 hours. The beans are dried for 10 to 12 days until the moisture in the coffee beans is at the proper level, then the dried coffee is transported to Addis Ababa, where it is milled and bagged prior to export.
