Named after farmer Olman Sauceda’s daughter, Belén comes from a truly unique and highly sought-after coffee variety called Chiroso.
This varietal has a bit of a mysterious history. Though first discovered in Colombia in the early 2000s, genetic testing reveals its roots trace back to an Ethiopian landrace. The name “Chiroso” is actually rural Colombian slang for “elongated,” a nod to the shape of its beans. We may not know exactly how it traveled from Ethiopia to Colombia, or how it ultimately ended up on Olman’s farm in Nicaragua, but we’re incredibly happy it did.
FAVORITE BREW METHOD
Natural processed coffees from the Americas have a sweet spot for us. That sweet spot is highlighted when brewed on a Chemex, which brings out their rich sweetness and body and lets their fruity characteristics show off.
